Today, we harvested one of our way overgrown courgette. It was really humongous, over 5 kg. My little brother really struggled with it. Poor thing surprised.

We made half of it into courgette hash brown, and the other half into chocolate brownies.

Anyways, back to the hash brown. After dad cut it up and got the seeds and the middle out, he let me and Adel shred some of it. It is hard work, so we took turns, and let dad finish it up eventually. wink We didn't even peal it, because there was no need for it.

After shredding the courgette in a big bowl, let it set for a few minutes, until there is a lot of liquid on the bottom. Pour the liquid off, then we mixed up 1 kg of shredded courgette, 4 eggs (we have 3 hens, they are so much fun to watch too), half a head of garlic, salt, pepper and about 6 big heaped spoon of flour. We mixed it until the whole thing became a not too runny, not too hard dough.

When the dough is ready, with a tablespoon portion it on to a silicone baking sheet and just flatten it down with the back of the spoon.

Courgette hash brownWhen the baking tray is full, just put it in the preheated oven (180 °C) for about 30 minutes. Because it is on a silicone baking sheet, we don't even need to add any oil.

When they are ready, we put a bit of sour cream and grated cheese on it while warm. It is to die for. tongue-out
